Variable rate coil spring the deflection rate increases as you compress the spring. A constant rate coil spring is always the same rate. As you can see in the image the top coils are closer than the bottom coils. This gives it a better ride for the first bit but can still handle loads once those top coils engage against each other. If you're running a constant load then a constant coil is better but if you're hauling / towing now and again then variable rates are better.
